Gin Gaio Spirito is a celebration of the perfect balance between taste and beauty — born from the expertise of the historic Valverde Distillery nestled in the Langhe hills, the obsessive passion of The Gin Freak for the world of gin, and the creative genius of artist Gio Pastori. Every bottle is a showcase of Gio's extraordinary paper-cut mastery — an illustrator known for compositions that are both essential and vibrant. The Making of Gin Gaio Spirito
This is not just a gin. It's the result of a meticulous, almost obsessive creative process — where every decision, from the first botanical to the final pour, was made with intention.
Botanical Selection
Tuscan juniper, cardamom seeds, coriander fruit, elderflower, grapefruit peel, bitter orange peel, hazelnuts, rosemary leaves, sage leaves.
Nine botanicals. Each chosen for the unique role it plays in the final flavour profile.
Infusion
Each herb, spice and citrus is infused separately in a hydroalcoholic solution — for a duration tailored to its specific character. This individual approach allows every aroma to develop slowly and fully, preserving its freshness and intensity without compromise.

Low-Temperature Distillation
After maceration, each extract is distilled using a Rotovapor — a vacuum distillation system that operates at low temperatures. This innovative technique protects the most delicate and volatile aromatic notes, eliminating the risk of degradation from heat. The result is a gin of extraordinary freshness and precision.
Blending
The individual distillates are then combined according to the original recipe, and purified water is carefully added to achieve the desired 43% ABV — the point where balance and character meet perfectly.
Analysis & Rest
Before bottling, the gin undergoes rigorous analytical testing, followed by a resting period of at least 7 to 10 days in stainless steel tanks. This final maturation step allows the flavours to fully integrate and the product to reach its peak expression.
The result is a gin that is elegant, complex and deeply aromatic — with fresh, well-defined notes that reflect the craftsmanship and precision of an innovative production method.
