Some places don't just serve food — they serve history. Founded in 1830, Osteria Aquila Nera is one of Udine's most iconic institutions: a historic inn that has crossed centuries without ever losing its authentic soul.
Born as a simple gathering place where locals debated politics and culture over a glass of wine, Aquila Nera evolved with the times — becoming a full restaurant and hotel between 1924 and 1938, before returning to its original tavern spirit in the new century.
Today, Osteria Aquila Nera remains a landmark for the people of Udine and for anyone who wants to taste the history, tradition and flavours of Friuli in a setting that is deeply rooted in local culture — but with a quietly contemporary touch.
Some things get better with age. This is one of them.

Since 2011, Osteria Aquila Nera has been in the hands of Luca and Patrizia — two people who understood that preserving tradition doesn't mean standing still. It means evolving it with creativity and passion.
Luca, a legendary host and a true reference point for lovers of Friulian cuisine, is now joined by his daughter Sara. After years working in London's finest restaurants, she returned to Udine carrying an international perspective that brings a fresh, modern energy to the Osteria.
The result is a perfect dialogue between experience and contemporary vision — between the roots of a 200-year-old institution and the boldness of a new generation. You feel it in the kitchen, you taste it in the menu, and you see it in every carefully selected product — the best of Friuli and beyond.
Old soul. New eyes. One extraordinary table.
The kitchen at Osteria Aquila Nera is a journey through nature and the seasons. Every dish tells a story — built on fresh, exceptional ingredients that range from fish to meat, all the way to game.
The chef takes the classics of Friulian tradition and reimagines them with a contemporary hand — unexpected combinations, new perspectives, and an unwavering respect for what came before.
The real strength of this kitchen lies in its deep connection to the land. Local produce is transformed into dishes that are simple on the surface but layered with flavour underneath. House-made bread, grissini and desserts. Zero-waste preparation. Modern techniques used not to show off, but to protect the integrity of every fresh ingredient.
This is not just cooking. This is a philosophy.
At Aquila Nera, every plate is a quiet act of devotion — to the land, to the season, and to the people who sit down to eat.
VeroAmaro & VeroVermouth Favero
Luca and Sara introduce us to two authentic gems of Friulian tradition: the VeroAmaro and the Vero Vermouth from the historic Farmacia Favero. Products that tell the story of an ancient Udine — built on time-honoured recipes, carefully selected botanicals and an artisanal knowledge that has survived the test of time.
VeroAmaro Favero is a spirit with a bold, uncompromising character. At its core, 14 carefully selected herbs — each chosen for the unique contribution it brings to the final flavour profile.
This is not a product. It's a piece of history in a bottle.
The result is a balanced amaro with a personality all of its own. Authentic, complex and deeply rooted — much like Osteria Aquila Nera itself, VeroAmaro Favero is where taste, history and tradition meet in perfect harmony.
Alongside the amaro, Luca and Sara take us on a journey into the world of Vero Vermouth Favero — a vermouth of delicate, enveloping flavour that wraps around the palate like a warm memory of old Udine.
Amaro & Gin Gaio Spirito
Luca and Sara take us into the world of Gin and Amaro Gaio Spirito — an artist's limited edition that hits hard, both in flavour and personality.
Good. Beautiful. Utterly unique. Born from the meeting of three extraordinary forces: the centuries-old expertise of a historic Langhe distillery, the passion of those who know how to tell great stories, and the creative vision of a truly remarkable artist.
